Lucie Gabrielle Randoin (11 May 1888 – 13 September 1960) was a French biologist, nutritionist, and hygienist. Lucie Randoin was born Lucie Fandard on May 11, 1888, in Bouers-en-Othe, Yonne. She attended the École Normale Supérieure in Paris and went on to attend the University of Clermont-Ferrand and the University of Paris, where she received her P.

A food composition table based on the Tanzanian food composition table ( Lukmanji et a. 2008) was used to convert the ingredients and recipes consumed into individual nutrients. Missing foods and/or nutrients were supplemented with data from the USDA food compo- sition table (USDA, 2014); the Kenyan food composition table (Sehmi, 1993); and the West African food composition table (Stadlmayr et a. 2012).

This explains how we have been able to give data on the content, in several food items, of pantothenic acid and of pyridoxine, vitamins that did not appear in previous tables. The contents of vitamin K are only given in a table in the third part of this book.
