This book is written with passion and talent. avid collector of cookbooks of top restaurants in the world. while I admire all the things willow inn is doing and their accomplishments, this cookbook is a bit deceiving in nature. It will make a great gift. ―-Edouard Cointreau, President of the Jury - Gourmand World Cookbook Awards. I am almost certain that the recipes are not the same measurements as the ones they use in the restaurant. take the smoked salmon for example. the book calls for 1 cup of salt for 1 quart of water to brine the salmon in for 30+ odd minutes. that's incredibly salty.
